One thing that can be said about spending all this time at home...our family has been eating well! Normally I cook about 3x per week, but that has amped up to nearly every night! You're probably spending a lot more time cooking these days as well. And I know it's not fun, it can be a drag, that's why I wanted to share some of our family's favorite (and easy) chicken dinners that are economical and delicious!

Chicken for dinner

I rely pretty heavily on chicken as our meat of choice. It's lean and healthy, and I've found a lot of ways to stretch not only the pricier boneless and skinless breasts but also a simple store-bought rotisserie!

In fact, we usually get 2-3 meals from one rotisserie chicken (for a family of 4 adults). The first meal is either enjoying the meat as or, or in one of my tasty recipes below. The second meal is when I simmer the chicken carcass in broth and spices to remove every last bit of chicken and either make soup or stew, and then the third meal is leftovers.

White Bean Chicken Chili

This unique chili is my son's favorite dinner! It's an economical, one-pan meal that uses only 1-2 chicken breasts but easily feeds a family of 4. The diced green chilies add a little zing and the savory gravy is perfect for serving over rice or noodles. You can find the recipe for my white bean and chicken chili here.

Homemade Chicken Noodle Soup

I never let a chicken carcass go to waste, and my yummy Chicken Noodle Soup is a favorite meal, especially when one of us is fighting a cold! One of the ways I make it even healthier is to add a handful of fresh spinach to my bowl before I pour the soup in. Notice I said "my bowl" (no one else in my family does this!). Lemon Chicken Pasta

This white pasta dish is so yummy that my teenage daughter routinely asks for it! The base is a super simple creamy, garlicky and lemony white sauce. Famous Chicken Tortilla Soup

I've been making this recipe for chicken tortilla soup for over 20 years! It's the only one I use because it's simply the best!
