Q. I am making a raspberry sauce recipe of Ina Garten’s that calls for raspberries, 1/2 cup granulated sugar, 1/4 cup water, 1 cup seedless raspberry jam and 1 tablespoon framboise liqueur.

I have not been able to find the liqueur, but did find a Framboise Belgian Raspberry Beer “Lambic.” Do you think I could substitute that for the liqueur? If so, how much should I use? — Rita Cohen, Columbus

A. I wouldn’t use the beer as a substitute, as it would probably add a bitterness that you might not want in a raspberry dessert sauce.

Substitute an equal amount of raspberry brandy, raspberry syrup (such as the Torani brand) or any other brand of raspberry or black-raspberry liqueur (such as Chambord).

You can often find miniature sizes in liquor stores or at World Market locations, given that you need just 1 tablespoon.
