Eggs are one of my favorite foods. I said it on this post about keto egg fast recipes that I could eat eggs every single day, and it’s true! I love preparing them in different ways, I love eggy foods (like this breakfast casserole) and I love sharing egg recipes.

But it’s the egg haters who are on keto that I worry about. They’re such an easy meal, and the egg fast diet is so effective. Doing keto and hating eggs must be so difficult!

I’m not saying that haters will love this recipe for keto cream cheese scrambled eggs. It’s not here to change your mind and covert you into an egg lover.

I’m actually not sure any recipe will do that. It’s also not one where I can promise, “you’ll barely taste the eggs, I swear!” It’s not true.

This recipe is absolutely for people who, at minimum, tolerate eggs. If you love them, you’re going to taste this recipe and want to make them this way for the rest of your life!

One side note: this egg beater changed my life! Honestly, it’s my favorite kitchen tool. The beaters pop off and go right into the dishwasher, while the handle goes back into the drawer.

The best part about these eggs is how much you can do with them. If you’re doing the egg fast you’ll likely want to stick to the original recipe, but everyone else can find are lots of variations. Food boredom is real!

There are also lots of variations that you can do to the recipe while keeping it keto. Here are some ideas:

  • Add shredded cheese
  • Add chopped ham or bacon
  • Substitute heavy cream for water for extra fat and creaminess
  • Mix in low carb vegetables
  • Use coconut oil oravocado oil instead of butter
  • Use a flavored sea salt, like basil salt, chipotle salt or truffle salt. Each will add heaps of unique flavor without any carbs.

Cream cheese adds a richness and umami to most recipes. In this particular recipe, the cream cheese makes your eggs exceptionally savory with a smooth, creamy texture.

Won’t the cream cheese be chunky in the eggs?

Maybe, depending on how you prepare the recipe. Don’t worry, though –they’ll be delicious even if the cream cheese has chunks.

Here are three different scenarios:

  1. If you don’t soften your cream cheese it will be difficult to mix into the eggs. You’ll definitely end up with cream cheese melted onto the eggs. This is very tasty!
  2. If you use softened cream cheese and you try to whip it in with a fork or a whisk it’s also not going to incorporate as well. Some will be blended into the eggs, the rest will melt around the eggs. This also tastes good, so don’t worry if this is the method you choose.
  3. Soften your cream cheese and use an egg beater or hand mixer to blend it into your eggs. This is the way you’ll get the cream cheese blended with the eggs. This is how I make them and I love them this way.

Do I need to use Philadelphia brand cream cheese?

Keto dieters should use Philadelphia cream cheese or check the label before using other brands. I’ve found that Philly has 1 gram net carbs per serving, while generic brands have 2 grams net carbs per serving.

If that extra carb per serving doesn’t bother you, then go ahead and use any brand you want.

How many carbs are in a serving of cream cheese scrambled eggs?

There’s 1.5 grams of carbs in a serving. The recipe makes two servings, so the total for the whole recipe is 2 grams net carbs.

Why is water used instead of milk in this recipe?

When I was in college a diner cook told me this trick: use water in scrambled eggs. The steam makes your eggs light and fluffy.

This is especially useful when you don’t want to add carbs by using milk in the recipe.

  • 1 1/2 tablespoons water
  • 2 tablespoons Philadelphia cream cheese, softened

How to make keto cream cheese scrambled eggs

  1. Crack your eggs into a mixing bowl. Add the softened cream cheese and mix with a hand mixer or egg beater until well blended. It’s ok if there are bits of cream cheese floating on the eggs. Optional: mix in two tablespoons melted butter if you’re on the egg fast diet.
  2. Melt the two tablespoons butter in a frying pan over medium heat. Tilt the pan to coat the bottom and sides.
  3. Pour the egg mixture into the frying pan and let to sit for about 60 seconds. Gently Stir the eggs, flipping with a spatula until the eggs are fully cooked. (2-3 minutes)
