This recipe is for anyone asking how do you make ketchup from scratch.

We all know about the convenience of having ketchup around and ready to pour on or dip our food into. But, as you may have heard, sometimes that ketchup can be loaded with sugar.

As a result of all of that sugar, it is probably a good idea to learn how to make your own ketchup.

The good news is that it is not all that hard to do.
I also like that when you make your own ketchup you can also personalize it to your liking by adding other ingredients.

You may be wondering if there a ketchup without sugar.

Making your own homemade ketchup is also a good option for folks who may be on a diabetic or restricted salt diet.

Here are some tips for making homemade ketchup.

I mentioned that this recipe should make about a cup of homemade sugar free ketchup. You can tweak the recipe to make more ketchup if desired.

Here are some more helpful tips for you.

  1. Apple cider vinegar is used in this recipe. White vinegar can be used in lieu of apple cider vinegar, however, it may make your ketchup taste more acidic as a recipe. This can be easily be balanced out by adding additional sugar alternative.
  2. Personalizing this recipe to your taste is simple. Feel free to add additional seasonings or omit seasonings that I have indicated in the ingredient listing. Examples include adding a bit of jalapeno or hot sauce.
  3. If you ketchup seems to be too thin, you try cooking it down in a skillet or adding a bit of a thickener such as cornstarch, Xanthan gum and guar gum powder . To thin out your ketchup, add a bit more vinegar (be sure to balance it out with sugar alternative if needed).

How to store homemade ketchup.

Because of the acidity that is in ketchup, it is best to store it in a glass container rather than plastic or metal. This ketchup will keep for up to two weeks if refrigerated in a sealed glass container such as a jar.

Ingredients needed to make homemade ketchup without adding sugar

  • Tomatoes- 2 ½ pounds. I am a fan of Roma tomatoes for this recipe as there is less water and more flavor in them. Yes, some people like to make ketchup using canned tomatoes. However, canned tomatoes usually have other ingredients added to them such as salt, which can affect the outcome of this recipe.
  • Garlic- 1 clove
  • Shallot- ½ diced. That is about a tablespoon. An alternative for shallot can be an onion.
  • Apple Cider Vinegar- ½ cup.
  • Allspice- ¼ teaspoon.
  • Ground Ginger- ½ teaspoon.
  • Nutmeg- ¼ teaspoon.
  • Pepper- 1 teaspoon.
  • Kosher Salt- 1 tablespoon (adjust as needed).
  • Brown Sugar Alternative- 3 tablespoons (adjust as needed)..

How to Make Sugar Free Ketchup

  • Prepare your glass jars by making sure that they are clean and ready to go. This recipe will make about one cup of ketchup .
  • In a large stockpot on medium heat, cook tomatoes uncovered. While the tomatoes begin to soften, attempt to mash them down and also stir them as needed. It should take about 10-15 minutes to cook and mash the tomatoes as needed.
  • Allow the tomatoes to cool down to room temperature, about five minutes. Meanwhile, place 'mesh' strainer over the top of a new pot. When the the tomatoes have cooled you can strain them into the new pot and place that pot on to the stove. Add the remaining ingredients to the pot and bring the ingredients to a boil. Once it starts to boil, reduce the heat to a simmer and cook the ketchup until thick, stirring occasionally, about an hour.
  • Transfer the ketchup to a food processor and process to your desired consistency. Then transfer to your prepared jars and allow to cool.
  • This ketchup should keep for up to two weeks in the refrigerator if stored properly.

This is an updated recipe for sugar free ketchup.

Below is the original recipe that was posted on this site.

Here is what you will need to make your own ketchup.

  • Whole Tomatoes (canned) in juice- 1 can (28-32 ounce).
  • Tomato Paste- 1 tablespoon.
  • Oil- 1 tablespoon. Vegetable or olive.
  • Onion- 1 chopped.
  • Garlic- 3 cloves minced.
  • Cider Vinegar- ¼ cup.
  • Brown Sugar Alternative-¼ cup equivalent to sugar.
  • Celery Salt-½ teaspoon.
  • Paprika- 1 teaspoon.

How to Make Sugar Free Ketchup

  • Start by blending your canned tomatoes with the tomato paste in a blender or processor. Optionally, you can skip this step by using canned chopped or ground tomatoes (28-32 ounce can) .
  • In a saucepan on medium heat, start by sauteing your onion. After about two minutes add your garlic to the sauce pan and continue to saute until they begin to brown- about 5-6 more minutes.
  • Stir in the vinegar and blended tomatoes from the first step.
  • Finally add your remaining ingredients and allow the contents of the saucepan to just about boil. Then turn the heat down to a simmer and cook for an hour, stirring occasionally. We want the ketchup to thicken.
  • Remove the ketchup from the stove and allow to cool down for at least 10 minutes. Then pour it into a blender until it reaches your desired consistency.
  • Refrigerate for at least three hours. This will keep for about four weeks in the refrigerator or you can freeze it.
  • Make this in a slow cooker by adding your ingredients and cooking uncovered for 10 hours and stirring occasionally. Blend if needed for consistency.
