How long do freeze-dried avocados last? ›

Freeze drying avocados allows them to stay green and fresh for years.

The chamber and shelf components, usually stainless steel, must distribute heat uniformly and tolerate vacuum stress without deforming. So, the cost is high due to precise engineering. A second reason why are freeze dryers so expensive is their limited volume and high-complexity manufacturing process.

Only ripe avocados should be stored in the freezer because once they are frozen, they won't continue to ripen—even when thawed, says Ann Ziata, chef-instructor at the Institute of Culinary Education.

At peak, the freeze dryer draws about 13-15 amps, but on the average about 9 to 11 amps (990-1210 watts) of power per hour. A dedicated 20 amp circuit is recommended. Your freeze dryer will cost an estimated $1.25-$2.80 a day, depending on power costs in your area.

Storing Freeze-Dried Fruit

It estimated that unopened, freeze-dried fruit has a shelf life of up to 30 years! Once opened, they can last up to one year, if stored under proper conditions. It recommended storing them in a cool, dry place that isn't exposed to direct sunlight, such as a pantry.

Whole avocados tend to become brown and very mushy upon thawing. As such, you should cut, mash, or purée the fruit before freezing. Frozen avocado has a shelf life of 4–6 months, but commercial products may last even longer due to added preservatives (8).
